The plots of land with vines
can be found at an altitude from 400
to 450 metres above sea level, facing south, southeast
and are formed in the main part by new plantation with variable
densities between 3400 and 6800 vines
per hectare.
The vineyards are grown organically
and the type of plant growths chosen are "guyot
" and "cordone speronato" (method of
pruning the vine).
As the vineyards are considered the main
part of the production, particular attention is paid
at its maintenance, carrying out pruning
and green grape picking (harvesting).
The production is based on low yield and the harvesting of
the grapes is done manually to allow a
scrupulous selection of the fruit.
The whole cultivation process follows an objective that
is to obtain a product of the highest
quality which expresses with personality the characteristics
of its land.
About 80% of the vineyards are made up of selected cloned
Sangiovese.
The other vines of red berries, are mainly represented by
Merlot and Cabernet Sauvignon,
with a little bit of Canaiolo
and Syrah.
In particular the selection of white berry vines, apart from
the Malvasia and Chardonnay,
also present Sauvignon blanc,
the Viognier and the Gewurztraminer,
varieties considered very rare for the area.
