THE OLIVE GROVES: "from our olives
a special oil is born"
Within the Farm, the olives are positioned in rows between
the vineyards and fields of wheat. Not a casual fact. Alternating
different cultivations is indeed a natural
method preventing the spread of eventual parasites.
Oil is obtained from the olives situated on land of medium
mixture: 44 hectares for about 8000 plants of native varieties
of which (oil-mill) frantoio,
leccino, moraiolo
e pendolino. The olives are organically
cultivated and manured with leguminous of green manure.
Even today the "stripping off"
is done by hand to assure a perfectly healthy fruit
during the period of ripening.
