Boil the potatoes till tender and let it cool. Once they are cool, peel the skins. In a deep pan, heat some olive oil and cook the the garlic finely chopped with the bacon /or sausage. Once cooked, add the tomato suace. Add the potatoes in the sauce and mix well. Place the fresh pasta on the table in strips and with a spoon place the potatoe filling distant 3cm from each spoonful. Fold the pasta over and press on the border with two fingers to tight enough to make sure it is closed and the is no air inside. In a large pan , boil lots of water and add a fist ful of salt. Once it starts to boil, one by one gently put the tortelli’s inside, The temperature of the water will fall, but once it starts to boil again the tortellis will float to the surface again, wait another two minutes before draining. Serve with a sauce such as meat sauce.

Ingredients ( for 6 people):

- 500 gr boiled potatoes
- 50 gr bacon or sausages
- 5 tablespoon of tomatoe sauce
- salt
- pepper and nutmeg powder grated
- pecorino cheese
- 1 garlic clove
