il-tiramisu

TIRAMISU

Ingredients for 6 people:

- 500gr. mascarpone
- 5 fresh eggs
- 5 teaspoons of sugar lady fingers
- savoiardi or pavesini
7 espresso cups of coffee
- cocoa powder

Separate the egg yolks from whites. Beat yolks with sugar until it gets light and fluffy. The volume should doubled when it is ready. Blend it with the mascarpone cheese. Stir it well, until you remove all the lumps (by hand or by the mixer) with back of spatula and mixing in well. Beat egg whites until stiff and gently fold into cheese mixture a 1/3 at a time. If you would like to make it more “Italian” add a little Vin Santo in the coffee. Soak lady fingers in coffee until they get soft. Put the coffee dipped cookies on a dish and a layer of mascarpone mixture on top, repeat layers for 3 times. Sprinkle the top with cacao or freshly ground chocolate. Refrigerate it for 2 hours.

Straccetti pasta with sausage, onion and tomatoes

Ingredients: ( for 6 people)
Sauce:

- 4 sausages
- 1 onion
- 5 tomatoes
- extra virgin olive oil

Peal the onion, and slice it up into small cubes. Heat up a frying pan with a bit of extra virgin olive oil in it and get the onions brown. Add the sausages in, cook them together for about 15 minutes, than add a glass of white wine to it. When it starts to evaporate, add the chopped tomates and cook for about an other 40 minutes.

- 5 Cups flour ( 500 gr )

Spicy oil

50 g of chillies, 1 l of extra virgin olive oil

Put chillies to dry under the sun  for about a week (but not let it become too dry,with no more red color). Once dried, cut into small pieces and dip them in 1 L of extra virgin oil inside a bottle or a glass jug with airtight seal.
