TIRAMISU

Ingredients for 6 people:

- 500gr. mascarpone
- 5 fresh eggs
- 5 teaspoons of sugar lady fingers
- savoiardi or pavesini
7 espresso cups of coffee
- cocoa powder

Separate the egg yolks from whites. Beat yolks with sugar until it gets light and fluffy. The volume should doubled when it is ready. Blend it with the mascarpone cheese. Stir it well, until you remove all the lumps (by hand or by the mixer) with back of spatula and mixing in well. Beat egg whites until stiff and gently fold into cheese mixture a 1/3 at a time. If you would like to make it more “Italian” add a little Vin Santo in the coffee. Soak lady fingers in coffee until they get soft. Put the coffee dipped cookies on a dish and a layer of mascarpone mixture on top, repeat layers for 3 times. Sprinkle the top with cacao or freshly ground chocolate. Refrigerate it for 2 hours.

Herbal tea of Absinthe

Dried and crushed Absinthe, hot water, sugar as taste.

Digestive and bitter herbal tea. Need to know how to measure out the amount infused wisely to avoid a preparation absolutely undrinkable. Use no more than 1/4 of a teaspoon of chopped and dried grass or a green leaf per cup of water. With these proportions bad taste is pleasant and sugar is even more acceptable. A small cup of BREW after meals is great for good digestion.

Wormwood is also used to combat fleas, dog garden scale insects...

sage

Sage

Sage is native to the northern Mediterranean coast, where it's used frequently in cooking. Italians love it with veal, while the French add it to stuffings, cured meats, sausages, and pork dishes. Americans, of course, associate it with turkey and dressing.

Sage pairs perfectly with rosemary and thyme in many dishes. Besides its versatility and compatibility with other...
