Basil is an essential element in different cuisines.
Its leaves give a lively flavor to dishes and it's fine for sautéed dishes, salads or sauces.

Very widespread in European and Asian cuisine.
Basil was once used by farmers against colds, inhaling the aroma that was created by soaking the dried leaves in a bowl of boiling water.

Ingredients for 6 person:

- 350 gr chicken liver
- 1/2 onion
- 1 carrot
- 1 celery
- 2 tablespoons of butter
- 1 tablespoons of capers
- 3/4 anchovy fillets

Laurel vodka

10 g of laurel leaves, 1 dl lemon juice, 1 dl of vodka, 2 teaspoons of sugar

Prepare an infusion by placing leaves in the boiling water, letting it sit for 10 minutes. Strain and add the lemon juice and vodka while it is still hot, but not shaken.
Let rest for at least an hour, then serve by adding sugar.
